How to Make a (Dutch) Baby

Got a brunch guest you need to impress?
Just feel like being indulgent all by your lonesome?

Have I got the recipe for you. This is absolutely the least labor-intensive way to impress someone with a breakfast item. Plus you get to cheerfully announce that you’re having babies for breakfast.

I got this recipe originally from Orangette, but given my familial propensity for heart disease, I’ve been tinkering with it to make it less step 2: add 2 eggs and whiskguilt-inducing/artery-clogging.

The ingredients:

1/4 c. flour
1/4 c. 1% milk (or whatever you’ve got. Just not skim)
2 eggs
1 tbsp. butter (or thereabouts)

The method:

1. Preheat your oven to 400F.

2. Whisk together flour, milk and eggs.

step 3: melt some butter (~1tbsp)3. Melt the butter in a small cast-iron skillet. It’s going in the oven, so don’t use anything with a plastic or otherwise flammable or meltable handle.

4. When the butter’s melted, pour in the batter.

step 4.5: yes, all the batter
5. Put it in the oven and bake for 25 minutes. Don’t peek! Resist! Go entertain your guest. Make a mimosa or something.
step 5: put the baby-to-be in a 400F oven for 25 minutes (no peeking!)
6. 25 minutes later, voila! You’re a culinary genius!
25 minutes later... ta-da!
Serve hot. I like mine with lemon juice sprinkled atop because it goes so nicely with the slightly salty eggy taste, but it’s equally good with a nice jam or powdered sugar.

moose!

Went backpacking up in Baxter State Park over the weekend (beautiful as always).. Hiked into Russell Pond and launched day hikes from there for a few days. It was great. Just the thing to really, truly get away from it all.
There are always lots of moose at Russell, and they’re great fun to watch (from a distance of course).. caught this one munching underwater weeds. I love the ears. :)
